COMPOTE DE POMME ET POIRE
What to do with apples and pears (and any fruit for that matter) that are getting old? Make Compote de Pomme et Poire (apple & pear compote)!! A fantastic addition to breakfast, as a snack and can be used for desserts (i.e. tarts), this simple recipe is a staple at my house. I love it because it’s naturally sweet! There’s nothing better than the naturally sweetness of fruit!
A couple of weeks ago, we were in Bourgogne with family for a long weekend. The weather was beautiful and below is a photo of the view from the house. As I always love doing on weekends, we went to the local farmers market. After finding 2 kilos of organic apples for 1.50 euros, I couldn’t wait to race back to the house to make compote. I ending up making a lovely tart with spelt crust one night and the kids gobbled it up for desert after lunch the next day and even asked for seconds! Sadly, there was none left. Remember that the fruit cooks down quite a bit so if you want to make a big batch, get a lot of apples!
COMPOTE DE POMME ET POIRE
INGREDIENTS
8-10 apples
2-3 pears
1 tsp vanilla extract (Organic if possible)
1 tbsp agave syrup (optional)
METHOD
Wash, peel and cut apples and pears into small pieces *
Add vanilla and agave syrup
Cook on low heat for 45 minutes to an hour
* Note: Save apple skins to make easy apple chips!
** Note: If there doesn’t seem to be enough liquid, you can add water a tablespoon at a time
